    30 Minute Light & Airy Spelt Rolls




    "30 Minute Light & Airy Spelt Rolls"

    Prep Time: 20 Minutes
    Cooking Time: 10 minutes
    Total Time: 30 minutes
    Method: Bread Machine/Mixer Bowl, and Oven


    Ingredients
    • 1 cup plus 2 tbsp warm water
    • 1/3 cup melted butter (+ A little extra for brushing on top)
    • 2 tbsp dry yeast
    • 1/4 cup coconut sugar, or 2-3 TBS Honey (I used a little of each)
    • 1 1/2 tsp unrefined sea salt
    • 1 large egg
    • 3 1/2 cup spelt flour, sprouted spelt flour or white spelt flour (any of these would work)
    • poppy or sesame seeds for garnish
    Instructions
    1. Preheat oven to 400 F.
    2. In your mixer bowl or bread machine combine water, butter, yeast and sugar. Mix and allow to rest for 15 minutes.
    3. Using your dough hook attachment (if using mixer bowl), mix in the salt, egg and flour. Knead with hook until dough is smooth and soft (about 2 minutes).(If you are using a bread machine, put it on "dough" setting, and just let it knead the dough until it is soft and smooth looking.)
    4. Form dough into 12 balls and place into a greased muffin pan and allow to rest for 10 minutes.
    5. Brush with melted butter and sprinkle some poppy or sesame seeds on top.
    6. Bake for 10 minutes or until tops are golden brown.  
    These are equally good hot out of the oven, or made ahead and reheated in a foil packet in the oven. I made extra and tossed some in my freezer for a rainy day! :) Enjoy!
